Yes, you can use frozen bananas in this banana muffin recipe. All you have to do is take off the banana peel and microwave the bananas in a microwave safe bowl. Microwave the bananas for one minute increments until they become soft.
So the next time you have ripe bananas that you don’t think you are going to eat, toss them in the freezer. You will be glad you did, the next time you want to make banana bread. If you use frozen bananas the color of the muffins will be a little darker. On the other hand, if you use frozen bananas to make banana muffins, the banana muffins always taste sweeter.

Banana Muffin Recipe
Ingredients:
- ½ tsp salt
- 1 tsp baking soda
- 1 ¼ cups of flour
- 1 cup of sugar
- 3 ripe bananas
- 2 eggs
- ½ cup of butter
Directions:
Mix together the following ingredients in a large mixing bowl:
- 1 ¼ cups of flour
- ½ tsp salt
- 1 tsp baking soda
- 1 cup of sugar
In a separate bowl mix together the following ingredients:
- 3 ripe bananas (Mash 3 ripe bananas with a fork.)
- 2 eggs
- ½ cup of butter (Melt the butter in a separate dish, then add it to the rest of the ingredients.)

- Pour the mixture over the first bowl of dry ingredients and mix it together.
- Use muffin liners to line your muffin pan. (optional)
